Yummy Wok-Fried Char Siu 上海煎叉烧

I love honey roasted pork (叉烧), but dislike the fat and will always request for the lean section when ordering honey roasted pork rice. Have tried a few times from my mother-in-law's home cook "Char Siu" and its yummy..

So decided to try my hands on it, its rather easy as long as its being marinated long enough (recipe stated at least overnight but mine was marinated and kept in the freezer for about a week, haha). In order to have a nice yummy roast pork in a more healthier way (I suppose) so I bought lean pork. It is as tender as pork belly and it really tasted so yummy-licious!..


What to match with this yummy pork slices? Wanton mee is our choice ;-)

Wok-Fried Char Siu 上海煎叉烧

Recipe by Adapted from Hawkers' Fair.. best of all time favorites by Yum Yum Publications - 古老大牌档菜
Ingredients
  • 800 grams Pork Belly, cut into 4 thick slices 花肉, 分切 4条 (* 可用梅肉 / I used lean pork)
  • 3 tablespoons Garlic, chopped 大匙蒜茸
  • 500 ml Water 水
  • 3 tablespoons Light Soya Sauce 生抽
  • 2 tablespoons Dark Soya Sauce 蚝油
  • 1 teaspoon Oyster Sauce 黑酱油
  • 2 1/2 tablespoons Caster Sugar 幼糖
Cooking Directions
  1. Mix pork belly, chopped garlic, seasoning and marinate for 1 hour (refer note). - I marinated it and left it in freezer for days (花肉加入蒜茸和调味料拌匀腌1小时 (参考注)。- 我把肉放入冷冻柜几天
  2. Bring water to boil, add in pork belly and cook in medium heat until the gravy is dry. Continue cook in low heat to pan-fry the meat until it is lightly golden brown on both sides. (将水煮滚,加入花肉中火煮至汁干,再用小火煎至两面金黄即可取出,切片享用。) 
  3. Remove, cut into slices and serve hot.



Notes:
Alternatively, marinate pork belly overnight in the fridge will be tastier.
花肉可放入冰箱腌隔夜,效果会议更入味,也更好吃

Note-to-self:
Use 300-350ml water to cook small amount of pork
如果煮小份量肉,水份量用300-350ml
